Panzanella

I added this to the meal plan, only to realize we weren't going to be around for one of the days I planned for. When I had M decide which meal to delete, he wanted to get rid of Panzanella. I figured it would be a great lunch, so got the ingredients anyway.

I'm so glad I did, because last night had us running around late for dinner, AGAIN, and to make the planned meal would have had us eating after 7. This, instead takes about 10 minutes to put together, after all your chopping time.

It was very tasty, though I am glad I added some shredded mozzarella for some protein... in the future, I would use cubed mozzarella instead. Unfortunately, it wasn't super filling, and so I ate about half the bowl! I didn't have any Champagne vinegar, so instead used white wine vinegar with great results. I do wish I had made more of the vinaigrette, because it was a little bit too dry with what I ended up making. I also might add in some kalamata olives next time for some nice salty flavor.

Overall, a very tasty dish with lots of end of summer veggies that is super fast to make!

Ingredients

  • 3 tablespoons good olive oil
  • 1 small French bread or boule, cut into 1-inch cubes (6 cups)
  • 1 teaspoon kosher salt
  • 2 large, ripe tomatoes, cut into 1-inch cubes
  • 1 hothouse cucumber, unpeeled, seeded, and sliced 1/2-inch thick
  • 1 red bell pepper, seeded and cut into 1-inch cubes
  • 1 yellow bell pepper, seeded and cut into 1-inch cubes
  • 1/2 red onion, cut in 1/2 and thinly sliced
  • 20 large basil leaves, coarsely chopped
  • 3 tablespoons capers, drained

For the vinaigrette:

  • 1 teaspoon finely minced garlic
  • 1/2 teaspoon Dijon mustard
  • 3 tablespoons Champagne vinegar
  • 1/2 cup good olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper

Directions

Heat the oil in a large saute pan. Add the bread and salt; cook over low to medium heat, tossing frequently, for 10 minutes, or until nicely browned. Add more oil as needed.

For the vinaigrette, whisk all the ingredients together.

In a large bowl, mix the tomatoes, cucumber, red pepper, yellow pepper, red onion, basil, and capers. Add the bread cubes and toss with the vinaigrette. Season liberally with salt and pepper. Serve, or allow the salad to sit for about half an hour for the flavors to blend.

Scallops Provencal

PhotobucketJulie Powell commented in Julie and Julia that she shared with Julia Child a love of butter, and attributed the amount of butter she consumed during her project for her weight gain. It's true, butter makes everything delicious and delightful (says the girl who was raised on margerine...) This dish is no exception; the addition of 4T of butter makes an amazing sauce to accompany the lightness of the scallops. This was heavenly and creamy.

After his first bite of scallop, A said "Mmmmmm" (as in yummy), but wouldn't eat it after that. Dunno.

I served this over whole wheat thin spaghetti, which was a great choice. I didn't have much in the freezer for veggies (I think broccoli would work perfectly), so went with corn.

Definite keeper! I could definitely have gone back for seconds, thirds, if I wasn't concerned about all that butter!

Ingredients

  • 1 pound fresh bay or sea scallops
  • Kosher salt and freshly ground black pepper
  • All-purpose flour, for dredging
  • 4 tablespoons (1/2 stick) unsalted butter, divided
  • 1/2 cup chopped shallots (2 large)
  • 1 garlic clove, minced
  • 1/4 cup chopped fresh flat-leaf parsley leaves
  • 1/3 cup dry white wine
  • 1 lemon, cut in 1/2

Directions

If you're using bay scallops, keep them whole. If you're using sea scallops, cut each 1 in half horizontally. Sprinkle with salt and pepper, toss with flour, and shake off the excess.

In a very large saute pan, heat 2 tablespoons of the butter over high heat until sizzling and add the scallops in 1 layer. Lower the heat to medium and allow the scallops to brown lightly on 1 side without moving them, then turn and brown lightly on the other side. This should take 3 to 4 minutes, total. Melt the rest of the butter in the pan with the scallops, then add the shallots, garlic, and parsley and saute for 2 more minutes, tossing the seasonings with the scallops. Add the wine, cook for 1 minute, and taste for seasoning. Serve hot with a squeeze of lemon juice.

Sausage Stuffed Mushrooms

Ingredients

  • 16 extra-large white mushrooms
  • 5 tablespoons good olive oil, divided
  • 2 1/2 tablespoons Marsala wine or medium sherry
  • 3/4 pound sweet Italian sausage, removed from the casings
  • 6 scallions, white and green parts, minced
  • 2 garlic cloves minced
  • 2/3 cup panko crumbs
  • 5 ounces mascarpone cheese, preferably from Italy
  • 1/3 cup freshly grated Parmesan
  • 2 1/2 tablespoons minced fresh parsley leaves
  • Salt and freshly ground black pepper

Directions

Preheat the oven to 325 degrees F.

Remove the stems from the mushrooms and chop them finely. Set aside. Place the mushroom caps in a shallow bowl and toss with 3 tablespoons of the olive oil and Marsala. Set aside.

Heat the remaining 2 tablespoons olive oil in a medium skillet over medium heat. Add the sausage, crumbling it with the back of a wooden spoon. Cook the sausage for 8 to 10 minutes, stirring frequently, until it's completely browned. Add the chopped mushroom stems and cook for 3 more minutes. Stir in the scallions and garlic and cook for another 2 to 3 minutes, stirring occasionally. Add the panko crumbs, stirring to combine evenly with all the other ingredients. Finally, swirl in the mascarpone and continue cooking until the mascarpone has melted and made the sausage mixture creamy. Off the heat, stir in the Parmesan, parsley, and season with salt and pepper, to taste, Cool slightly.

Fill each mushroom generously with the sausage mixture. Arrange the mushrooms in a baking dish large enough to hold all the mushrooms in a snug single layer. Bake until the stuffing for 50 minutes, until the stuffing is browned and crusty.



These were tasty, but the recipe made WAAAAY too many for the number of guests we had. I got ENORMOUS stuffing mushrooms, and made a whole lot of them (I can't remember how many were actually in the container, but it was close to 20). For 6/8 people who had been eating appetizers all night, that's way too much. This was a pretty tasty version of stuffed mushrooms, although I'm not sure what purpose the addition of marscapone served. It's not exactly inexpensive, and it didn't really seem to do much for the flavor here.

Anyway, I tried a new one, and was satisfied with the results, but will probably keep looking for a stuffed mushrooms recipe.
